"Heaven Can Wait" Cookies

WOW! The best of everything..chocolate chip cookies, oatmeal cookies, peanut butter cookies and coconut cookies married together. My take from an idea found at Foodnetwork Magazine.

Peanut Butter Oatmeal Chocolate Cookies

INGREDIENTS

  • 1 1/2 cups oatmeal.
  • 1 cup creamy peanut butter (think Skippy or Peter Pan)
  • 4 tbsp butter, melted
  • 1/2 tsp salt
  • 1/3 cup sugar.
  • 2/3 cup light brown sugar.
  • 2/3 cup shredded sweetened coconut
  • 1 1/2 cup semi-sweet chocolate chips
  • 1/4 tsp baking soda.
  • 1/4 tsp baking powder
  • 2 eggs

METHOD

→ Preheat oven to 350 degrees

→ Mix the peanut butter and butter in a large bowl with a big spoon or spatula (electric mixer not necessary).

→ Add the sugars, salt, baking soda and powder, mixing well.

→ Then add the eggs, oats, chocolate chips and schredded coconut, thoroughly mixing.

→ Using a a small ice creme scoop, create individual rounds of dough and place them on either a silicon baking mat or parchment paper over a baking tin.

→ With your finger, gently press down on each round to flatten it a bit..

→ Bake for 12-14 minutes or until LIGHT golden brown.

    CHEFS NOTE:
    If your careful about cross-contamination control, this can be a totally gluten-free treat.

    These are best when slightly underdone.
